INGREDIENTS:

 
25g Fueru Wakame or Wakame
Unpasteurised apple cider vinegar (preferably with ‘the mother’ - live sediment)
White Pepper 

 

 Guacamole

 ½ - 1 mashed avocado

  1 clove crushed garlic

  The juice of half a lemon

  Dash of chilli or cayenne

 Toppings

 1 chopped tomato

 1 finely chopped spring onion

 

Rinse and soak Fueru Wakame or Wakame in water until it starts to swell ( 5- 10mins). Rinse again and drain off excess water.

Place seaweed in a bowl and drench with Apple cider vinegar, give a generous dousing of white pepper. Make guacamole by mashing guacomole ingredients together and place on top of the seaweed. Throw on the chopped tomato and spring onion and any other chopped or marinated veg you fancy, e.g shitake mushrooms.
